Global Knives were first designed in 1985 by Komin Yamada, he was comissioned by Yoshikin to develop a range of revolutionary knives using the best materials and latest manufacturing techniques. Global kitchen knives are crafted by hand using Yoshikin's own poprietery high carbon stainless steel called 'CROMOVA 18' in Niigata, Japan. CROMOVA 18 is hard enough for Global knives to hold the steep, acute cutting edge and stay sharp for a long time but also soft enough so that it is not too difficult to sharpen them. Another unique feature of Global knives is the smooth contours and seamless, all stainless steel construction which eliminates food and dirt traps offering the ultimate in safety and hygiene.
