Chocolate Fruit Cake

Serves: 4-6

Ingredients
5oz Butter or Margarine
5oz Caster Sugar
2 Eggs, beaten,
5oz Self Raisin Flour
1 oz cocoa
2 Table spoons milk
4oz Mixed Candied Fruit (cherries,apricots, peel etc)

Method

Cream butter and sugar until fluffy.
Gradually beat in the eggs.
Sift the flour and cocoa powder into the mix and mix until smooth.
Fold in dried fruit.
Turn into 6" tin.
Bake on Gas Mark 4/ 180 degrees.

This cake is also delicious split in half and filled with chocolate butter cream and topped with melted dark chocolate-lovely!
