Monday Night PastaRecipe submitted by GourmetMummyMain Courses Preparation Time: 10 mins Cooking Time: 10 mins Serves: 2 Ingredients 150-200g short pasta ie fusilli (depending on how hungry/greedy you are) 2 tbsp Olive OIl 1 pack cubed pancetta 1 leek shredded 2 cloves garlic finely sliced 1/4 cabbage shredded Parsley finel chopped chilli flakes (optional) Parmesan to serve MethodCook pasta as per instructionsMeanwhile fry the pancetta until turning golden, add the leek and cook until starting to brown slightly. Add garlic, cabbage & chilli flakes (if using) and cook until cabbage is soft. Stir the pasta into the mix, adding plenty of pepper and the parsley. Serve into hot bowls and top with parmesan. (Note: I have called this dish "Monday Night Pasta" as I am always left with some cabbage or leek after we've had a Sunday Roast. This dish is a great way of using up any left over veg and it would work with already cooked cabbage It would tatste equally as good without the pancetta if you wanted to make it vegetarian)
