Grease and flour two 20cm sandwich tins. For the Chocolate Layer firstly combine the butter, sugar and vanilla essence in a bowl or food mixer, and mix well to a creamy consistency. Slowly beat in the eggs one by one. Fold in the sifted flour/cocoa Repeat the above for the Orange layer adding the orange zest to the mixture, Pour the mixture into the prepared tins. Bake for 20-25 minutes until well-risen, golden brown and springy when pressed. Turn out onto a wire rack and leave to cool. When cool split each layer across the middle (wilton cake leveller is fantastic for this) For the ganache, heat the cream in a pan, then break the dark chocolate into a large bowl. Once the cream is just boiling, pour it onto the chocolate, then leave for 5 mins. Stir until smooth, then leave until thickened and cool. To assemble alternate white and dark layers, and sandwiching with ganache finally topping the whole cake with the ganache, spread aroung the sides.
To decorate melt 30g of white chocolate and zigzag across the top using either a icing bag or squeezy bottle. |
