Blinis

Serves: 2-4

Ingredients
50g Buckwheat Flour (or Wholemeal)
50g Plain Flour
1/4 tsp baking powder
1 egg separated
1 tsp Butter - melted
1/4 tsp dried yeast

100g butter for frying (clarified)

Method

Sift the buckwheat, plain flour and baking powder together.
Mix the dried yeast with the warmed milk, and add the egg yolk to this and mix.

Whisk this into the dry ingredients to make a smooth batter and stir in the 1 tsp melted butter.
Whisk the egg white to stiff peaks and gently fold into the batter, keeping as much volume as possible.
Clarify some butter by gently melting it in a pan and pouring off the clear yellow liquid to use (throw away the white bit left behind in the pan). Heat the clarified butter in a blini pan and drop in dessertspoons of the batter. Cook until the surface starts to bubble, then flip over and cook the other side.

Serve with cream cheese and smoked salmon on top.
