Fruit & Nut Biscuits AKA ‘Stock Take Biscuits’

Ingredients
2 oz/50g Dark Choc (use at least 70% cocoa for best results)
4oz/110g Butter (Unsalted)
3oz/75g Demerara Sugar
1 Dessert Spoon Golden Syrup
1 ½ oz/40g whole unblanched almonds. Walnuts or Cashews can be used instead
1 ½ oz/40g dried cherries ( or any other dried fruits such as apricots)
4 oz 110g Self Raisin Flour
Pinch Salt
4oz/110g porridge oats.

Method

Preheat oven to 170c/Gas 3
Chop the chocolate, nuts and fruit into small chunks.
Melt the butter, sugar and syrup over a low heat
Sift the flour and salt into a large bowl and add the oats and most of the chocolate, nuts and fruit (set some aside to sprinkle on top later).
Add the melted butter and sugar and stir well.
With hands, bring the mixture together, if the mixture is a little dry add a drop or two of water.
Lightly oil two baking trays and divide the mixture into 18 walnut sized lumps and press and flatten.
Sprinkle the remaining chocolate, nuts and fruit over the top
Cook one tray at a time on the middle shelf in the oven for 15 minutes
Cool on the baking tray for 10 mins then remove onto wire rack to finish cooling. products used in this recipe
