Beef, Chickpea and Spinach CurryRecipe submitted by Mrs S HiltonMain Courses Preparation Time: 10 Mins Cooking Time: Approx 1 1/2 to 2 hours Serves: 2+ Ingredients (I don't bother measuring or weighing this recipe. Taste as you go along and make a judgement on how much it would take to feed the number people you are planning to feed.) Onion-Chopped (the onion helps keep the meat tender, so if its for more than 4 people add another onion) Beef-cut into bit size pieces a cheaper cut is idea as it will be cooked for 2 hours Tins of chickpeas Can of coconut milk Beef stock Garam Masala- 1 level tea spoon for every 2 people being fed Chilli flakes Spinach- the frozen pieces are ideal for this recipe MethodFry the onions on a gentle heat for 5 minutes in a bit of oil Add the garam masala, a sprinkle of chilli flakes and stir in Add the beef ensuring it gets coated in the spices and gets some colour to it Add the coconut milk and chickpeas Add enough stock to just cover the rest of the ingredients Give it a good stir and taste- it might need more garam masala Cover, and then set on a low, low heat for 1½ hours For the last half hour of cooking remove the lid to help thicken the sauce Add the frozen spinach 5-10 minutes before serving
Serve with rice, couscous, nan breads Yummy
It can taste even better if you cook the dish the day before but don't add the spinach until you are reheating it just before serving.
If there are leftovers and you take it to work the following day-watch out for exploding chickpeas in the microwave!!
