Grilled Tuna Nicoise Salad

Ingredients

8 large new potatoes boiled and quartered.
300g french beans, blanched, refreshed and halved,
24 cherry tomatoes, halved
24 black olives, stoned and halved,
Tablespoon of capers,
2 shallots, peeled and sliced into rings,
16 quail's eggs, soft boiled and halved, or 4 free range hen's eggs, soft boiled and quartered,
Sea salt and fresh ground black pepper,
Classic vinaigrette (300ml good olive oil, 100ml white wine vinegar, seasoning. combine all ingredients in a shaker and shake!, any excess will keep for up to a week)
4 x 150g tuna steaks.

Method

Combine the first six ingredients in a large bowl and season well, dress generously with the vinaigrette and arragnge on four dinner plates. Divide the eggs and arrange on each plate. Meanwhile heat a griddle pan until very hoy, then season the tuna steaks and cook for approx 2-3 mins each side depending on thickness and the desired cook, arrange on top of the salad. add a little more vinaigrette and season as required. products used in this recipe
