Spicy Vegetable HotpotRecipe submitted by N MarshallMain Courses Preparation Time: 15 Mins Cooking Time: 45 Mins Serves: 4 Ingredients 1 Kg Potatoes 1.2Kg Selection of Vegetables eg: Peppers, Mushrooms, Onions, Leeks, Carrots, Broccoli, Parsnips. 2 Garlic Cloves 3 Tablespoons Olive Oil 1 Teaspoon Dried Thyme 1 Teaspoon Dried Rosemary 1 Teaspoon Paprika 1 Teaspoon Hot Chili Powder 1 Tablespoon tomato puree 140ml Cold Water 425ml Vegetable Stock Salt and Pepper to taste MethodPreheat oven to 200 degrees/Gas mark 5.Peel potatoes and cut into 1cm dice. Steam or boil for 10 mins and leave to dry. Cut vegetable selection into bite size chunks and place in a large saucepan/casserole dish. Crush the garlic and add to vegetables with 1 tbsp Olive Oil. Sweat the veg over a medium heat for 5 minutes. Add the thyme, rosemary, paprika and chili powder. Mix the tomato puree and cornflower with the cold water until smooth. Add the vegetable stock and mix well. Pour onto the vegetables and bring to the boil, stirring constantly. Season with salt and pepper. Transfer vegetables to a deep ovenproof dish or shallow casserole. Put the potatoes into a bowl with 2 tablespoons of olive oil and toss until all coated. Spread the potatoes on top of the vegetables. Place in the oven for 45 minutes until the potatoes are brown on the top.
